Notes

CREME BRULE 
Steep grains in 2 gallons of 155 deg. water for 30 min. Then rinse with 2 quarts of hot water. 
Near end of boil caramelize cane sugar over medium heat until amber color. Add to wort immediately before it hardens. At end of boil add vanilla and cardamom and let rest for 20 minutes.
