Notes

Used 40 60 70 mash schedule with 30 min rest at each temp. Mash heated directly in brew kettle

Mashed in brew kettle! with 25 liters of 48* water temp stabilized at 41*

Heated mash directly to 60* hold for 30 minutes also added 5 liters at 60*

13:00uhr
Reached 60* with 30 liters in the mash tun (took about 30 minutes to heat up)

Reached 70* let rest for 30 min

14:45uhr
Started sparge using fine screen but without the stainless braiding filter. Good flow!!!
After 20 liters in the kettle 15.5brix runoff
44 liters in the kettle before boil 13 brix (sg 1.052)

Added 1 cup brown sugar 14 brix

Boil started scooped off the scum boil kettle is full

18.00 
16 brix one carboy with 18.5 liter pitched koelsch yeast halfway through

16 liter in 2nd carboy. Both very foamy due to the chiller

45.5 liters at start of boil
34.5 liters in the carboys

Racked koelsch yeast sg 1.020 this yeast was extremely active and bubbled all over the fucking basement floor yeast still working, need to give it more time



May14, 2016 primed 13 liters of safale wort with 83 grams sugar sg before sugar stil 1.015

Safale 04 sg 1.015 tastes cleaner less floral has a kind of "stank" but in a good way. Will be tasty.
