What yeast to use? Lavlin D47: preserve fruit aroma, but will be dry - could backsweeten and serve flat. Packet Yeast: likely to end up very dry. Safale S-04: flocculates quickly, is fast and clean, can ferment low as 15 to preserve fruit aroma. 75% attenuation. Would be good in bottle too, though may still want to serve flat. Could use Gervin #9 or Lavlin 71B to reduce total acidity if wanting to add some malic acid. Gervin #9: aromatic yeast, young fruity bouquet, reduces level of malic acid by 25% or more.
