Notes

Used 8 oz of Briess Extra Special roast malt (noted below as special roasted malt.)

Plugged lautering run, sparged super-slow. had to give up on a lot of the sparge. Wound up with only 4.25 gallons, instead of target 5 gallons.

Fermented at 68 for 18 hours till it was bubbling heavily. Then raised temp to 74 deg for two weeks.
