Besides adding lots of hops to get intense hop flavor, bitterness, and aroma, the key to brewing great imperial IPA is to avoid having too much crystal malt flavor and too high a finishing gravity. FG Should range from 1.012-1.015. To get a low enough finishing gravity, all grain brewers will need to use a low mash temperature and add simple sugars. Ferment the beer with plenty of healthy, clean yeast at a restrained temperature. This helps control any hot solvent-like notes. As soon as the bulk of the yeast drops out, transfer beer to a second fermenter and add the dry hops. The pellets should break up and eventually settle to the bottom of the fermenter. This might take a few days, so don't panic. Let the beer sit on the hops for another 7 days, approximately 7-10 days total. When finished carbonate the beer to approximately 2-2.5 volumes. |
